Two Travel Bites | Chocolate Fig and Almond Butter Cinnamon Toast + My Out-of-the-Box Packing Essentials

Today’s post is a bit short + sweet because I am writing from roughly halfway across the world. My mom and I are currently in a little Airbnb with the windows flung open, looking out over palm fronds and a little herb garden below, just outside of the historic town of Hoi An, Vietnam. We have had two and a half days of walking, sight-seeing, and a lot of eating incredible food. While taking a mid-afternoon break from it all, I wanted to pop in and share some general travel insights with you all, along with a recipe, tested and tried for this very trip.

Almond, Maca, + Chickpea Flour Granola

I am the kind of person who likes to make lists and check things off. I get immense satisfaction from organizing my days and adding up the little accomplishments. While this has served me well in terms of getting things done, staying on top of the small daily tasks and being someone who doesn’t forget deadlines, it also has worked against me in terms of adopting more of a yoga mindset into my life.

The smallest scents, sights and sounds have the ability to send me time-traveling and hit with a wave of homesickness.

Chocolate Chip Spelt Cookies with Pecans + Orange

A funny thing has happened in the past year and a half. Every time I relay to someone that I am flying back to Minneapolis, I say without hesitation “I am going home for the holidays” and yet when I then say how long my trip is, I conclude with “I am flying home at the end of the month.” I suppose learning to call two places home is part of growing into full adulthood, but there is something curious about it when the two places are so vastly different.
